Now, I am not a gourmet cook. I am not a gourmet anything. But, on the other hand, I would rather eat at home then go out to dinner. Why? Because I can control my portions and I know exactly what ingredients are going into what I eat.
When I first got married it was pork chops and hamburgers cooked in the broiler. Boring and plain. Usually burnt. I think our teeth got lots of exercise chewing those pork chops. PLUS casseroles. Casseroles were my friend then and they are now. Only I have definitely upgraded from noodles, a can of tuna, and a can of peas.
If you dread cooking or trying to figure out what is for dinner I totally understand. Some nights I forget to plan ahead. I then ask my husband if he is hungry..with fingers crossed that he says no. 🙂 But when he says yes, and I have nothing prepared…that is when I scramble. You too?
I know that cooking and meal prep should be fun. So, as I find and create meals that are easy, with few ingredients, and take little time…I will send them on your way. One of my readers told me she has tried every one of my recipes and loves them all.

Find what works for you. Quick and easy. On a budget. Dump it all in a crock pot. And then stick to that way of cooking. When you can eliminate the stress of cooking you are paving your way to be able to choose joy…everyday.
