Words alone can NOT describe how yummy the salmon is when cooked this way. PLUS, it is super easy. As a matter of fact, it is my most requested recipe. I LOVE making it for dinner the day that guests arrive. I can make it early in the day and pop it in the oven or on the grill and still continue catching up without missing a beat. And it only takes about 15-20 minutes to cook!
Recipe for Salmon in Foil Packets
Recipe is for 2 – (Print option is below)
6-8 ounces salmon per person. Skin and bones removed
1 big tomato – about 1/4” slices
1 lemon – sliced thin – seeds removed
1 sweet potato or regular potato – sliced very thin
3/4 bag spinach
salt and pepper
olive oil
Cut up all your veggies
Cook your sliced potatoes for about 4 minutes in the microwave (or use your steam oven). This way they will be soft without over cooking the salmon
Cut a 24” piece of aluminum foil and fold in half
Open up the foil and coat the bottom half with a light layer of olive oil
Lay your potatoes in the center. You will need to overlap them a bit because you want to keep the edges of the foil free from any food
Add the tomato slices – about 2-3 per packet
Salmon on top
Sprinkle with salt and pepper
Lemon slices on top of the salmon – about 2 per packet
