Who doesn’t love a great cookie?! Especially a great peanut butter cookie. But, a great KETO peanut butter cookie – isn’t that an oxymoron?
We made these cookies a few years ago for birthday celebrations – (nothing like being current on the blog, right?!)
We wanted a birthday dessert and, at that time, 90% of my family was following the Keto Lifestyle (with amazing results I might add) so wheat, grains, and anything sugar or ‘ose’ related was out of the question.
My daughter sent me a recipe for some cookies – I gathered the ingredients and she made a test batch. NOT good. She then tweaked it and tweaked it again. AND…. they were a hit. Even my non-Keto family members could not stop eating them!
Because they are so yummy, and many people are following the Keto lifestyle, I wanted to share these Keto Peanut Butter Cookies with you. Super easy to make and very yummy.
Keto Peanut Butter Cookies Recipe –
1 cup creamy peanut butter – sugar free. I love Richard’s. Trader Joe’s has a great one too.
1/2 cup monk fruit sweetener (classic)
1/2 Tbsp almond flour
1 egg, room temperature
1 tsp baking soda
1 tsp vanilla extract (homemade is best – easy and simple recipe is HERE)
- Preheat the oven to 350 degrees.
- Combine all of the ingredients into a bowl and mix well.
- Use a smallish ice cream scoop (or your hands) and roll into tablespoon-sized balls.
- Place on a cookie sheet and then slightly flatten with a fork.
- Bake for 14 minutes.
Note: Let them cool on the baking sheet for 5 minutes before removing. They will harden as they cool.
