Keto Coconut Milk Yogurt

NON dairy recipe. Keto and Paleo friendly

Ingredients
  

  • 3 cans 13.5 oz full-fat coconut milk without guar gum if possible
  • 2 packs unflavored gelatin
  • 1 T monk fruit sweetener
  • 1 T vanilla
  • 1 capsule dairy free probiotic to equal 30-35 billion

Instructions
 

  • Shake the cans of coconut milk
    Pour in medium sauce pan.
    Bring to a simmer. Do NOT boil.
  • In the meantime, dissolve the gelatin into 1/2 C boiling water. Make sure it is completely dissolved.
  • Once the milk has come to a simmer, remove from the heat and add the dissolved gelatin and monk fruit.
  • Grab a large bowl and put ice in it. Pour the liquids into a smaller bowl and place inside the bowl of ice. Keep adding ice as it melts.
  • Once it has reached 92ยบ (takes about 20-25 minutes) ADD the vanilla and probiotics.
  • Ladle into little jars and keep warm for 10-12 hours. I use a yogurt maker.
  • When the time is up shake the jars and refrigerate 2-4 hours.
  • Top with toasted coconut, almonds and/or berries.
