Shake the cans of coconut milkPour in medium sauce pan. Bring to a simmer. Do NOT boil. In the meantime, dissolve the gelatin into 1/2 C boiling water. Make sure it is completely dissolved.
Once the milk has come to a simmer, remove from the heat and add the dissolved gelatin and monk fruit.
Grab a large bowl and put ice in it. Pour the liquids into a smaller bowl and place inside the bowl of ice. Keep adding ice as it melts.
Once it has reached 92ยบ (takes about 20-25 minutes) ADD the vanilla and probiotics.
Ladle into little jars and keep warm for 10-12 hours. I use a yogurt maker.
When the time is up shake the jars and refrigerate 2-4 hours.
Top with toasted coconut, almonds and/or berries.
